Ticket counting
Helps you to determine total numbers and peak sales times.
Direct observation
Staff on duty observe details like performance quality, audience reaction, crowd flow, adequacy of facilities/signage, and any problems.
Debrief
A round-table debrief with key members of staff involved in the event.

Formal methods
You can conduct these through surveys and reports. Seek feedback from those attending the event, about satisfaction levels, the program, venue, speakers, catering, access issues, publicity and the accuracy/usefulness of pre-event information.
